Meet the Picnk Dietitian!
My name is Elizabeth Beil RD, LD, and I am the dietitian for Picnk! Over the next several months you will start to see a monthly blog post written by myself on topics about nutrition, food and nutrition events happening in the Dayton area, and a few Instagram takeovers!
In 2012, I graduated from The Ohio State University with a degree in Nutrition in Industry and a minor in Business. After graduation, I moved to the Dayton area to support my husband who was attending law school at the University of Dayton (Go Flyers!).
While looking for "career jobs", I started working part-time at a local running store, Runners Plus, and soon realized how much joy came from helping other runners fulfill their goals and dreams. I had started running casually when I was in college, but this casual hobby soon turned into much more and has now become a way of life!

My time at the running store was a great experience, but I knew I wanted pursue nutrition and helping others. I started taking classes part-time in 2015 at the University of Dayton and graduated in 2016 with my degree in Dietetics and was matched at The Ohio State University for my dietetic internship.
My first job after my internship was with a weight management clinic where I worked for over a year as a dietitian in outpatient counseling. I knew after working for a small local business and seeing my father own his own business, I knew private practice was a field I wanted to explore. In 2018 I decided to quit my job and start work as a part-time inpatient clinical dietitian along with pursuing my goals to open up a private practice.
How did Will and I meet? His first day at Runners Plus was my last day! :)
What will I be doing for Picnk?
I have calculated all the "soon-to-be-seen" nutrition labels for all Picnk meals, soups, snacks, etc.
We will soon be offering nutrition counseling, specifically for those interested in Picnk meals only. What does this mean? Do you use Picnk meals but want to be more mindful about specific nutrition? Maybe you want to watch calories or carbohydrates or protein and unsure how a Picnk meal would meet these goals. Nutrition counseling will be offered when you pick up your meals at a discounted rate.
At the beginning of 2019, I officially opened up Elizabeth Beil Nutrition. My focus for clients is meeting where they are in their nutrition needs, setting realistic long-term goals and being the accountability piece!
Nutrition can be frustrating. My role is to help alleviate the frustration. I will help you with understanding a new diagnosis, which nutrition could play a key role, or maybe a desire to lose weight, or wanting to make healthier choices.
